Deng's Sudanese alwalwala

One of my favourite things to eat is my Mom's Sudanese alwalwala.

Alwalwala is a sweet or savoury dish from Sudan that costs very little to make. It is made from yellow or white corn (maize), and sorghum flour, which is gluten-free. Instead of sorghum, wheat flour also works in this recipe.

Mix 4 cups of corn flour and 1 cup of sorghum or wheat flour with 3 tablespoons of oil or ghee. Boil 7 cups of water and slowly mix the flour paste into the water. Keep stirring and simmer the mixture on low heat until it thickens. Add sugar at the end, or serve it plain

Alwalwala can be eaten hot or cold. Sometimes the dough is rolled into little balls, and it is also served with yogurt on top. I like it best with vanilla ice cream.
